I recently started to feel a dislike towards veggies, I didn’t know why at first but I realized that it was because I’ve been feeding myself blanched, lightly salted veggies 🥱
It was getting bland and boring, so I started to test out some recipes that could add more life and flavor into my veggies. Here’s a fun and flavorful green bean recipe that I’ve been enjoying. When I first imagined this dish, I felt like long beans would have been a better option, but it wasn’t at the grocery store that I went to so I just picked up green beans. I figure that it would also be more available than the long beans in the average grocery stores.
Try this recipe with other veggies too! It doesn’t have to just be green beans. Broccoli, Asparagus, Bok Choy, etc…
Ingredients
Green Beans (12oz)
Garlic (6 cloves)
Chilli Flakes (2 teaspoons)
Mushroom Bullion (1 tablespoon) this is the one I use.
Soy Sauce (1 tablespoon)
Directions
Prep the green beans by snipping off the stem end, you can also snip off the other end of the green beans as well if you don’t want to keep it on, but that is optional. Just make sure that the stems are snipped off… unless you enjoy eating the stem, then you do you!
Bring a pot of water to boil (do not salt) then blanch the green beans in boiling water for about 4-5 minutes. Prepare an ice bath while the green beans are in the water, after the 4-5 minutes transfer them to the ice bath. Leave it in the bath for about 2-3 minutes than strain it.
Cut the garlic cloves into thin slices then add about 2 tablespoons of cooking oil (I use avocado oil) to a sauté pan, heat it up on medium heat.
Add the sliced garlic and 1 teaspoon of chilli flakes, once the garlic is golden and fragrant, add the green beans. Give it a few tosses then add 1 tablespoon of mushroom bullion, 1 tablespoon of soy sauce and crank the heat to high for 2 minutes. Make sure to toss often.
Plate and enjoy with rice or by itself (:
