THE “MAMA DO”
okay so boom. I made a sandwich with Open Market , looks bomb right? but before I do the break down of what’s in the sandwich, I’d love to highlight Open Market and what they’re all about.
Open Market is a neighborhood corner store that offer local goods, L.A. inspired sandwiches & delicious coffee. What really stood out to me on my first visit here was how good it felt to be there, even though it was my first time it felt like I’ve been coming here for a while because of how welcoming it felt.
I got the Berendo sandwich, which is their banh mi style sandwich. Whenever I get a “banh mi” style sandwich in LA, my expectations are very low BUT this sandwich was so undeniably good, it blew me away. I had half of the sandwich because I couldn’t finish a full one so I ate the other half the next day & it was STILL SO GOOD.
Food that was made with love and intent will always be felt. It left me wanting to know more about Open Market and what they’re all about. So I reached out to their team to talk about a possible collaboration because this place was a gem that I wanted to be apart of.
After the meeting it was clear to me that the Open Market team shares a lot of the same focus and intention when it comes to culture and community. We both shared the same vision of what connecting with people through food looks like and I was really excited to start ideating what our story would look like.
I wanted to introduce something that I haven’t done at any of my other pop-ups before so I thought this was a great opportunity to introduce my mom’s Nem Noung recipe. Nem Nuong is a sweet and savory BBQ Pork Sausage that I grew up with. When I eat Nem Nuong, I feel my mom. My mom hates having people in her kitchen so I never got the opportunity to cook alongside her, but when it came to making nem nuong (especially shaping it) she welcomed me with open arms into her kitchen.
We honor Mama Do with this sandwich inspired by her. Love you mom.

The Box
To complement my mother’s recipe, Open Market has tapped local Vietnamese coffee roaster, Nam Coffee, to create their take on Vietnamese iced coffee made with sweetened oat milk. For dessert we asked Tiffany Kim of Loaf Language LA to make a Pandan Coconut Mochi Krispie inspired by the flavors of the Vietnamese dessert, che dau trang.
