I want to start off by saying that the OG Lemongrass chicken recipe is and will always be 🔥 so this new recipe is in no way shape or form an upgraded recipe, it’s an updated recipe 😌.
This updated recipe came about because I was playing around with it for a pop-up, it turned out better than expected so I had to share.
I turned the updated recipe into skewers and served it with peanut sauce and a side of korean pickled cucumbers. I’m proud to say that it was a hit at ComplexCon and it made me feel so happy that people got to enjoy it. I hope you recreate this recipe and enjoy it as well.
Ingredients
4 chicken thighs (skin on)
2 tbsp minced garlic
2 tbsp minced lemongrass
2 tbsp minced shallot
2 tbsp fish sauce
2 tbsp sugar
2 thai chillies (optional)
2 tbsp chilli flakes
2 tbsp korean chilli powder
1 cup Neutral cooking oil
Directions
1. Mince garlic, lemongrass and shallot. Slice chillies
2. Make marinade by combining garlic, lemongrass, shallot, fish sauce, sugar. Whisk until well combined.
3. **This step requires you to wear gloves! If you don’t put gloves on, your hand is about to smell like the marinade that’s full of garlic and fish sauce for 3 days. Take my advice pls lol.** Run the marinade through a cheese cloth or a strainer to separate the liquid marinade from the “pulp”
4.Cut chicken into bite sized pieces & place in clean bowl. Then pour the liquid marinade on the chicken, cover and let it sit for at least 1 hour. If you have time, let it sit overnight 😍
5. Add chilli flakes and korean chilli powder to the pulp mixture and heat up 1 cup of oil on high and add it straight into the mixture. (you just made lemongrass chilli oil! 🥳)
6. When you’re ready to cook the chicken. Coat pan in oil. Sear chicken on med-high heat. Once you get a nice color & char, flip it & finish cooking.
7. Once the chicken is done, brush the lemongrass chilli oil on top.
8. Serve with rice or make it into skewers or just eat it by itself. Enjoy (:
