I’m a huge fan of the fish sauce + eggs combination, it’s how I season my scrambled eggs with and it’s amazing. If you’ve been living under a rock and haven’t seen how I make my scrambled eggs, you can watch it here . The reaction that I have gotten from that video has been awesome, I’m so happy that I’m able to change some people’s scrambled eggs game and open the door to the wonderful combination of fish sauce + eggs. So let me introduce you another combination of fish sauce and eggs, the Vietnamese title for this dish is Trứng dầm nước mắm which translates to smashed eggs with fish sauce.
At it’s most basic, it’ll just have fish sauce and boiled eggs, but everything is so much better with garlic and chillies, so added some. It’s such a humble and delicious dish that I actually forgot about, but always enjoyed growing up. Here’s how to make it.
Ingredients
Eggs (6)
Garlic (4-5 cloves)
Bird’s eye chillies (2-3)
Fish Sauce (1/4 cup)
Directions
Bring a pot of water to a boil and turn it down to a simmer. Drop the eggs in for 6-7 minutes.
While waiting for the eggs to cook, mash up the garlic and chillies then add it to 1/4 cup of fish sauce.
Once the eggs are done cooking, soak it in an ice bath for 5 minutes to stop the cary over cooking. Peel and cut the eggs in half or in quarters.
Drown the eggs in the fish sauce mixture and enjoy it with white rice.
Like my recipe for the fish sauce egg scramble this recipe is just as simple, but trust me.. it truly hit different and you won’t know until you try!

Is there a specific brand of fish sauce to use? I used what I had on hand, but it got too salty :( Do you have to add sugar or something else if that happens?
Hi when you say mash do you mean chopping garlic with a knife or adding the garlic into a mortar and use the pestle?:)
